A lightened up and easy gluten free bow-tie pasta salad with all the delicious flavors of a Caesar Salad. Perfect for a summer picnic, potluck or barbecue!
When it comes to the warmer months, I am always looking for recipes to make that are light and fresh.
Summer salads are so versatile and perfect for packing along to potlucks, picnics and barbecues.
Caesar salad is my husband’s all time favorite salad and I decided to combine the delicious components with some pasta for a more satisfying meal. I used gluten free farfalle (bow-tie) pasta but feel free to use whatever pasta you like or have on hand.
Plus, the dressing is homemade and lightened up with non-fat Greek yogurt and fat-free Nordica Cottage Cheese. It makes a healthier alternative for traditional cheeses when you still want that creamy texture — and it’s lower in sodium and fat.
This recipe is perfect if you’ve got some grilled or leftover chicken on hand.
You can just toss some into the salad for added protein or if you want to keep this meatless like I did for my bowl above, just sprinkle in your favorite chopped nuts, seeds or even roasted chickpeas would work.
And you can still keep this meal gluten free by making your own croutons using gluten free bread. It’s the easiest thing ever!
All you have to do is slice up the bread into small cubes, toss them with some extra virgin olive oil and your favorite herbs, and pop them into the oven for 5-6 minutes.
This pasta salad is a summertime classic and makes an easy, picnic-ready favorite. You can even prep the dressing and all the ingredients ahead of time too.
Just add the dressing to the ingredients before you are ready to serve.
