My oldest heads back to class today and I can’t help but wonder where the heck did summer go?!?
It’s totally bittersweet though since on the one hand I will only have one toddler to look after during the day while on the other hand it means hectic mornings and the race to get everyone ready and out the door on time are back.
Plus the dreaded what do I pack for lunch and snacks that my lil guy will want to eat that will keep him full and energized at the same time?
Enter granola bars – they are one of his favorite snacks and I’ll usually make a big batch on Sundays to pack along in his lunch box.
I love how easy they are to customize and these ones are based off of my 5 Ingredient granola bars which have no refined sugar and can be sweetened up with either date paste or honey.
For this recipe, we toss some chopped cashews with gluten free oats, cashew butter (or your favorite nut or seed butter), pumpkin seeds, pumpkin pie spice, a touch of pumpkin puree and some optional dried fruit for added color.
No butter. No white sugar needed.
They’re soft, chewy with a nice crunch and full of cozy fall spices in every bite.
And you can customize them to your liking with whatever add-ins you have on hand.
I added dried blueberries, apricots, banana chips and papaya to one batch and then left the other batch plain.
Plus, did I mention that they’re no bake too? That makes them super easy peasy!
You can make them ahead of time and store them in the fridge or freezer and when you’re ready, just toss them into a lunchbox or purse for a quick snack on the go.
