Oreo Cookie Skillet

This Oreo Cookie Skillet is soft, chewy and loaded with wholesome oat flour, creamy peanut butter, coconut sugar, chocolate sandwich cookies and leftover Halloween Candy. This monster skillet cookie is perfect for sharing and an irresistible treat that is sure to satisfy your sweet candy cravings!

Ingredients

  • 1 cup gluten-free oat flour you can also use cassava flour, gluten-free 1-to-1 baking flour or all-purpose flour if you're not gluten-free
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cup gluten-free old fashioned oats
  • 3/4 cup vegan butter melted. You can also use regular unsalted butter if you're not dairy-free
  • 1/2 cup coconut sugar you can also use brown sugar or brown sugar substitute of your choice
  • 1/2 cup pure maple sugar you can also use granulated cane sugar or granulated sugar substitute of your choice such as Lakanto monk fruit sweetener or Swerve
  • 2/3 cup creamy peanut butter you can also sub with another nut butter or seed butter of your choice if preferred
  • 1 large egg room temperature, or egg substitute of your choice
  • 1 teaspoon pure vanilla extract

Add-ins of choice (Feel free to omit or swap with cookies / chocolate chips / chocolate candies of your choice)

  • 1/3 cup optional chocolate sandwich cookies , such as Cataline Crunch, High Key, Simple Mills or gluten-free Oreo cookies, coarsely chopped. Or feel free to use cookies of your choice.
  • 1/3 cup optional candy coated chocolates , such as KetoGemz, Lily's Chocolate Coated Gems, Unreal Dark Chocolate Gems, M&M's or chocolate candies of choice. Feel free to add some dairy-free chocolate chips if preferred or omit.
  • 1/4 cup chopped peanut butter cups , optional. Feel free to leave out or use Keto cups or Sunbutter Cups of your choice.

Instructions

  1. Preheat oven to 350 F degrees.
  2. Lightly coat a 9 inch cast iron skillet or 9" round cake pan with cooking spray.
  3. In a large bowl, whisk together the flour, baking soda, and salt. Stir in the oats. Set aside.
  4. In another large bowl, whisk together the melted butter and both sugars until smooth. Add peanut butter and mix until incorporated. Whisk in the egg and vanilla until smooth and combined.
  5. Slowly stir in the dry ingredients to the wet ingredients and mix until just combined. Be careful not to over-mix.
  6. Fold in half of the sandwich cookies, candy coated chocolate candies and peanut butter cups (if using) - reserving the other half for topping.
  7. Gently press cookie dough into prepared skillet and top with reserved chocolate sandwich cookies, candy coated chocolates and peanut butter cups evenly.
  8. Bake 22-27 minutes or until an inserted toothpick comes out clean.
  9. Serve warm, with vanilla ice cream.
