Easy Pumpkin Chili

Easy pumpkin chili is the perfect dish to warm you up on a cold day. Made with sweet potatoes, kidney beans and black beans - it's a hearty and filling meal that's comforting & delicious!

Ingredients

  • 2 15-ounce cans kidney beans drained
  • 1 15-ounce can black beans drained
  • 1 28-ounce can diced tomatoes with their liquid
  • 1-1/2 cup water can substitute with chicken, beef, or vegetable broth
  • 2 green bell peppers cored, seeded, diced
  • 2 medium sweet potato diced
  • 1-1/2 pounds ground turkey can substitute with beef
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1/4 teaspoon of Worcestershire sauce
  • 1/2 teaspoon pumpkin pie spice or cinnamon
  • salt and black pepper to taste
  • 1 can of pure pumpkin puree not pumpkin pie filling
  • 1 tablespoon avocado oil

Suggested Toppings:

  • sour cream
  • shredded cheese
  • cilantro
  • avocado
  • tortilla chips

Instructions

  1. In a large pot over medium-high heat, heat the oil. Add the onion, and saute for 2 to 3 minutes until it begins to look translucent.
  2. Add in the ground meat, garlic, and salt and pepper to taste. Brown the meat, and break down into smaller pieces.
  3. Add tomatoes, bell peppers, sweet potatoes, pumpkin, water, chili powder, cumin, oregano, Worcester sauce, pumpkin pie spice and bring to a boil. Reduce heat to medium low and add beans. Cover and simmer, stirring occasionally, for 25 minutes or more. Adjust seasoning as needed. Ladle chili into bowls and serve.
  4. Add suggested toppings of your choice.
