Strawberry Granola

This Strawberry Granola is full of wholesome oats, maple syrup and is exploding with flavor from a timeless combination: chocolate and strawberries. It’s an easy breakfast recipe to make, and so much better than the granola you find in the store.

Ingredients

  • 3 cups old fashioned gluten-free oats , use certified gluten-free as needed
  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup slivered almonds
  • 2 tbsp coconut sugar , you can sub with brown sugar or any granulated brown sweetener (such as monk fruit) of choice.
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil melted
  • 6 tbsp maple syrup , you can substitute with agave, vegan honey or a sticky sugar-free sweetener of choice.
  • 1 teaspoon pure vanilla extract
  • 1/4 cup dark chocolate chunks or chips , use a dairy-free brand to keep this recipe completely vegan
  • 1/4 cup white chocolate chips , use a dairy-free brand to keep this recipe completely vegan (we like Pascha's or Enjoy Life)
  • 1/3 cup freeze-dried strawberries
  • 1/2 cup fresh strawberries

Instructions

  1. Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper. Set aside.
  2. In a large bowl, combine the oats, coconut, almonds, coconut sugar, and salt. In a separate bowl, whisk together the melted coconut oil, honey and vanilla extract. Pour over oat mixture and stir until just combined and moistened.
  3. Spread granola in an even layer onto the prepared baking sheet and pat down flat with a spatula or your clean hands.
  4. Bake in preheated oven for 40 - 45 minutes or until golden brown, rotating the pan halfway through. (Do NOT stir granola while baking).
  5. Remove pan from oven and allow granola to cool completely.
  6. Once cool, break granola into clusters and transfer to an airtight container. Stir in freeze-dried strawberries and all the chocolate chips.
  7. Serve with yogurt, fresh strawberries or fruit of your choice.
