Healthier General Tso's Chicken

Healthier General Tso's Chicken is a quick and fuss-free easy meal made in a Micom rice cooker. It’s the perfect balance of spicy and sweet and best of all, the prep time is just 5 minutes!

Ingredients

  • Sauce
  • 3 tablespoons chicken broth
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon reduced sodium soy sauce
  • 1/2 tablespoon honey
  • 2 teaspoons cornstarch
  • 1/3 lb skinless chicken thighs cut into smaller bite-sized pieces
  • 2-3 dried red chilies
  • Sesame seeds for garnish (optional)

Instructions

  1. In a small bowl, whisk together all the ingredients for the sauce. Place chicken inside the bowl and marinate in the fridge covered for at least an hour, or overnight.
  2. Put the washed rice and water in the inner pan, and set in the rice cooker.
  3. Place the marinated chicken along with the dried chilies on the cooking plate and set it in the rice cooker on top of the inner plate.
  4. Select the [Plain/Synchro-Cooking] menu and press the [Start] key.
  5. Scoop rice into serving bowl and top with chicken. Spoon any additional cooked sauce on top and sprinkle with sesame seeds, if desired.

Recipe Notes

*if you don't have a Micom rice cooker, you can place all the ingredients into a slow cooker for 4 hours on low or cook on the stovetop by sauteing until chicken is cooked through.
