Ingredients

Optional Add-Ins:

  • dried bananas
  • dried sugar-free raisins optional
  • dried sugar-free papayas
  • sliced almonds

Instructions

  1. Preheat oven to 300 degrees F. Line a large rimmed baking sheet with parchment paper or a Silpat mat.
  2. In a large bowl, mix together the pumpkin puree, pumpkin pie spice, and salt. Stir in the maple syrup and vanilla extract until smooth. Add the oats, flax-seeds and stir until evenly coated. Fold in the pecans and pumpkin seeds.

  3. Spread mixture evenly onto baking pan and press the granola down with the back of a wooden spoon or spatula to flatten it out to stick together. That will help create the clumps to make crunchy clusters.

  4. Bake for 40 minutes, Do NOT STIR and rotate the pan halfway through. Gently move around any pieces that may be cooking unevenly at the edge (we don't want to break apart the clusters) with a wooden spoon or spatula.
  5. Once baked, remove from oven and allow granola to sit and cool completely for another 30 minutes. Break apart any very large pieces to your preferred size.
  6. Sprinkle with the dried raisins if desired.
  7. Serve granola with your favorite milk, yogurt or alone by the handful.
