Tortellini Pasta Salad

This Greek Tortellini Pasta Salad is bursting with Mediterranean flavors and perfect for summer barbecues and potlucks. This refreshing salad features cheese tortellini, crisp cucumbers, cherry tomatoes, tangy feta cheese, and a zesty Greek dressing.

Ingredients

  • 2 8-ounce package fresh gluten-free tortellini (or one 16-ounce package) , or you can use any gluten-free or grain free pasta brand you like. We love these grain-free Ravioli or Gnocchi from Cappello's. If you are looking for a chickpea or lentil based pasta, you can use Banza pasta shells that are made with chickpeas. For keto, there's Almond Love or any low carb pasta brand you like.
  • 1 cup cherry tomatoes , halved
  • 1 small / medium English cucumber or 2 Persian cucumbers (about 1 cup) , cut into half moons
  • 1/3 cup chopped red onions
  • 1/2 - 2/3 cup Kalamata olives , halved lengthwise or thinly sliced
  • 1/4 cup sliced radishes
  • 1/3 cup crumbled vegan feta , we like Violife Vegan Feta. Omit or use your favorite feta if preferred.
  • 1-2 tbsp chopped fresh dill
  • 1-2 tbsp chopped fresh flat-leaf parsley

For the Homemade Dressing: (or use Primal Kitchen Greek Salad Dressing)

  • 1/2 cup extra virgin olive oil
  • 3 tbsp red wine vinegar , can sub with 2 tbsp apple cider vinegar
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic , finely minced or grated
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • Coarse sea salt or kosher salt , to taste
  • Freshly ground black pepper , to taste

Instructions

  1. For the homemade dressing:

    Add all the ingredients for the dressing into a small bowl or a resealable jar. Whisk or shake until well combined. Adjust seasonings as needed. Set aside or chill in the fridge until ready to use, shaking or whisking prior to using..

  2. For the salad:

    Cook the tortellini according to pasta instructions. Drain and rinse under cool water. Set aside or pat dry if needed to remove any excess water.

  3. In a large bowl, add the salad ingredients: drained tortellini, tomatoes, cucumber, onion, olives, half of the feta and half of the chopped herbs, reserving the rest for garnish. 

    Pour desired amount of the dressing (you may not need all of it) over the salad and gently toss to combine. Season with more salt and black pepper, as needed.

  4. Garnish with a little bit more fresh parsley and / or crumbled feta, if desired. Serve and enjoy but for best results, chill in the fridge for at least an hour for flavors to meld together before serving.
