Roasted green beans with garlic and balsamic is the perfect easy recipe using fresh green beans. Fancy enough for a holiday meal and easy enough for a weeknight side dish!

Ingredients

  • 1 lb fresh green beans trimmed (make sure they are dry)
  • 2 Tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon sea salt or more to taste
  • 1/4 teaspoon freshly cracked lemon pepper to taste or more to taste
  • 1/2 teaspoon garlic powder
  • 1/3 cup pecan halves optional
  • 1/3 cup dried cranberries optional

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with aluminum or parchment paper for easy clean-up.
  2. Place green beans evenly on the baking sheet and drizzle with olive oil and balsamic vinegar. Sprinkle with salt, pepper and garlic powder and toss to evenly coat.
  3. Spread green beans out evenly on the pan and bake in preheated oven for 15 minutes. Shake and turn the pan halfway through.
  4. Remove from the oven and sprinkle with dried cranberries, if desired.
