  • 3/4 - 1 pound ground turkey
  • 1/2 teaspoon salt divided, plus more to taste
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon cumin divided
  • 1/2 cup corn
  • 1/2 cup red bell pepper finely diced
  • 1/4 cup canned black beans rinsed and drained
  • 1/4 cup sliced olives
  • 2/3 cup enchilada sauce canned or homemade
  • 1/2 cup shredded Colby Jack or cheddar cheese plus more for topping
  • 2 - 3 medium Haas avocados cut in half and pits removed
  • 2 Tablespoons fresh chopped cilantro


  1. In a large skillet, add turkey and brown until cooked through. Drain any grease then season with salt, black pepper and 1/4 teaspoon cumin.

  2. Add corn, bell pepper, black beans, olives, enchilada sauce, remaining cumin and stir to evenly combine ingredients. Allow to cook for 2-3 minutes. Taste and adjust seasonings. Remove skillet from heat and stir in shredded cheese.

  3. Fill each avocado half with 2-3 tablespoons of the turkey mixture. Sprinkle with green onions, fresh cilantro, additional cheese and serve.
