Ingredients

  • 3/4 - 1 pound ground turkey
  • 1/2 teaspoon Himalayan salt plus more to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup red bell pepper finely diced
  • 1 Tablespoon sliced olives
  • 3 Tablespoons tomato sauce
  • 3/4 teaspoon taco seasoning (use Paleo or Whole 30 friendly recipe as needed)
  • 1/2 cup shredded Colby Jack or cheddar cheese plus more for topping (leave out for Paleo / Whole 30)
  • 2-3 medium Haas avocados cut in half and pits removed
  • 2-3 Tablespoons shredded cabbage red & green
  • 2 Tablespoons fresh chopped cilantro

Instructions

  1. In a large skillet, add turkey and brown until cooked through. Drain any grease then season with salt and black pepper.
  2. Add bell pepper, olives, tomato sauce, taco seasoning and stir to evenly combine ingredients. Allow to cook for 2-3 minutes, until heated through. Taste and adjust seasonings. Remove skillet from heat and stir in shredded cheese.
  3. Fill each avocado half with 2-3 tablespoons of the turkey mixture. Sprinkle with cabbage, fresh cilantro, additional cheese and serve.
