Ingredients

For the Salad:

  • 1 1/2 cups cooked gluten-free pasta , use any gluten-free or grain free pasta brand you like, but if you are paleo these from Jovial, or Almond Love for Keto or Cappello's grain-free pasta. If you are looking for a chickpea or lentil based pasta, you can use Banza pasta shells that are made with chickpeas.
  • 4 cups baby spinach
  • 1-2 cups of green leaf or romaine lettuce chopped
  • 2 tablespoons fresh basil or mint finely chopped
  • 1 1/2 cups sliced strawberries
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh blueberries
  • 2 medium avocados diced
  • 1/2 cup cubed watermelon
  • 1/2 cup chopped pecans or walnuts
  • 1 cup chopped cooked chicken grilled or rotisserie (leave out for meatless version)
  • 1/2 tablespoon feta crumbled optional for serving

For the Dressing:

Instructions

  1. Combine pasta, spinach, lettuce and basil in a large mixing bowl.
  2. In a small bowl, whisk together all the ingredients for the vinaigrette.
  3. Pour 2/3 of the dressing over the salad and toss to combine. Add the strawberries, blackberries, blueberries, avocado and cooked chicken (if using) and drizzle with the remainder of the dressing.

  4. Serve immediately with chopped pecans and crumbled feta, if desired.
