These Healthy Chocolate Turtles are easy to make and the perfect homemade candy for the holidays! A vegan version of the classic made with pecans, refined sugar-free caramel and dairy-free chocolate!
ARRANGE YOUR PECANS: Place 4 pecan halves around the same size and arrange them into clusters. Use one smaller pecan piece for the head.
MAKE YOUR CARAMEL: Combine the pecan butter with sweetener, vanilla extract and ground cinnamon and mix until smooth. If using maple syrup - be sure to add the almond flour to firm up the dough. If the mixture is too runny to form into a ball, place in the freezer for 5-10 minutes. Form into 2/3 Tbsp sized discs and place on top of pecan clusters.
MELT CHOCOLATE. Melt the chocolate and oil in a double-boiler over the stove or in a heat-safe bowl in the microwave in 10 second increments, stirring well in between. Spoon a small amount of chocolate on top of each turtle. Add a sprinkle of sea salt & garnish with a pecan, if desired. Allow the chocolate to set up – you can place the pan in the fridge or freezer to speed things up.
