Vegan French Toast

This Vegan French Toast is quick and easy to make with gluten-free bread, almond milk and no eggs. So delicious for breakfast or brunch and very simple to customize using your favorite pantry staples.

Ingredients

  • 3/4 cup almond milk , sub with any plant-based milk
  • 2 tablespoons cashew butter , sub with any other nut or seed butter
  • 1 tablespoons flax seeds
  • 2 teaspoons plant-based protein powder , optional. We like NuZest Just Clean or Sprout Living Pea Protein but you can use your favorite. We have not tested this with a Whey protein powder since we wanted to keep this recipe vegan but feel free to do so if it fits with your dietary preference.
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 tsp Lakanto sugar-free maple syrup can sub with pure maple syrup
  • 4 slices your favorite gluten-free OR keto bread

OPTIONAL TOPPINGS:

  • Lakanto sugar-free maple syrup , vegan butter, coconut cream and fresh fruit

Instructions

  1. In a wide shallow bowl, beat together the cashew butter with flax seeds, protein-powder (if using), milk, vanilla, cinnamon and salt until smooth and combined. You can also use a blender to get it super creamy and smooth.

  2. If using fresh bread, be sure to toast or bake it in the oven first before dunking it. This prevents the french toast from getting too soggy.

    Dunk your bread slices into the mixture and allow each slice to sit for at least 10 seconds to fully submerge and soak in mixture.

  3. Heat oil in a large frying pan over medium-high heat. Place each slice of bread in the pan. Fry each side until browned and slightly crispy, about 3-4 minutes. Flip and fry the other side for another 3-4 minutes, until crispy. Repeat until all pieces of bread are cooked.

  4. Serve warm with your favorite toppings.
