Instructions

Oven Method

  1. Preheat oven to 400F.
  2. Wash and peel (or leave skins on) sweet potatoes and cut into matchstick slices, about ¼ inch thick. Make sure they are cut into similar sized pieces.

  3. Place the potatoes in a large bowl and drizzle with oil. Season with salt, black pepper, garlic powder and paprika.

Line two baking trays with parchment paper and divide the fries between them. You don’t want to overload the trays so make sure they have space to cook.

  4. Place in the oven for 15 minutes and then flip fries over with a spatula. Swap the trays over in the oven from top to bottom and vica versa. Leave to cook for another 15-20 minutes until they are tender but crisp on the edges.
  5. Remove the fries from the oven, sprinkle with some extra salt and pepper and finely chopped fresh parsley. Serve with favorite dips!

Air Fryer Method

  1. Cut each potato in half lengthwise, then cut into even 1/4-inch-wide slices, then turn the slices on their sides and cut into 1/4-inch fries / sticks (can use a knife, mandoline or a fry cutter). If the sticks are long, cut them in half so that your fries are about 3 to 4 inches.

Place the potatoes in a large bowl and drizzle with oil. Season with salt, black pepper, garlic powder and paprika.

Toss to combine until well coated. If your air fryer requires preheating, preheat the air fryer to 385 degrees F.

Working in batches, place the fries in the air fryer basket, spreading them out in a single layer without overlapping.

Air fry for 6 minutes, then toss / flip the fries and air fry for another 6-8 minutes (or longer as needed), until the fries are crispy with a few lightly browned edges, watching them carefully so they do not burn.

Remove the fries to a serving platter, sprinkle with some fresh parsley and serve with chipotle aioli or your favorite dipping sauce.

Make the Dips

Avocado Dip

  1. Mash the avocado in a bowl with the back of a fork until smooth with the juice of ½ lime. Add the coriander and then season with salt and pepper.

Cashew Dip

  1. Place the ingredients for the cashew cheese dip in a food processor and blend until smooth. If you don’t have a high speed blender soak them in hot water for 30 mins then drain.

Sriracha Aioli Dip

  1. Make the aioli by combining the mayo, Sriracha, lime juice, garlic powder and salt in a small bowl. Stir well.
