Strawberry Banana Bread Recipe

This strawberry banana bread recipe is incredibly moist and simple to make in one bowl! Paleo and refined sugar free and made with real ingredients, this gluten free bread recipe is a great way to use up any ripened bananas and the strawberries makes it perfect for spring and summer.

Ingredients

  • 1 cup almond flour super fine
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder gluten free
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon sea salt
  • 1/2 cup coconut sugar or golden monk fruit sweetener
  • 3 bananas spotty and ripened
  • 3 eggs large
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped strawberries (fresh OR frozen) + sliced strawberries for garnish

Optional Ingredients

  • 1/4 cup chocolate chips dairy-free; plus more for topping

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line an 8x4 loaf pan with parchment paper.

  2. Mash the bananas in a large bowl, and then beat in the eggs, sweetener, and vanilla.

  3. Place a large sieve over the bowl and sift in the almond flour, coconut flour, baking powder, cinnamon and salt. Fold in the chopped strawberries and chocolate chips, if using.

  4. Transfer to loaf pan and top with sliced strawberries and chocolate chips, if desired. Bake in preheated oven for 55 minutes or until set. Allow to cool slightly before cutting into slices.
