Easy Pickled Onions

These Pickled Onions are extremely flavorful and so easy to make in less than 10 minutes! Sweet, crispy, tangy and perfect for topping on sandwiches, tacos, salads, burgers and more! Naturally vegan, gluten-free, paleo, low carb, keto and Whole30 compliant.

Ingredients

  • 1 onion peeled and thinly sliced
  • 3/4 cups apple cider vinegar
  • 1 teaspoon fine sea salt
  • 1 garlic clove , minced
  • 1 tablespoon maple syrup , or sugar-free sweetener, leave out for Whole30
  • 1 tablespoon parsley freshly chopped

Instructions

  1. Peel and thinly slice an onion. Set aside.

  2. In a small saucepan, combine apple cider vinegar, salt, maple syrup or preferred sweetener, and garlic over medium heat. Bring to a gentle simmer.

  3. Remove from heat. Place the sliced onions in a medium-sized bowl, and pour the hot vinegar mixture over the onions.

  4. Add the freshly chopped parsley and stir the ingredients together. Set a timer for 15 minutes to let the onions marinate.

  5. After 15 minutes, stir the onions and let soak for additional 15 minutes.
