Instant Pot Turkey Breast

Ingredients

  • 1 medium carrot cut into thirds
  • 1 medium onion cut into wedges
  • 2 celery ribs cut into thirds
  • 1/2 lemon sliced
  • 1 1/2 cups chicken broth
  • 2 tbsp softened butter flavored coconut oil can sub with avocado oil, olive oil, ghee or butter if not dairy-free
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1/3 tsp dried rosemary
  • 1/3 tsp dried oregano
  • 1/3 tsp dried thyme
  • 1/3 tsp dried sage
  • 1 bone-in, skin-on turkey breast 6-7 lbs, patted dry, gravy packet removed if included

Instructions

  1. Place the carrots, onions, celery, sliced lemons and broth in an 8-quart Instant Pot.

  2. In a small bowl, use a fork to combine the coconut oil, salt, pepper and seasonings and brush or rub on the turkey breast.

  3. Place the trivet on top of the vegetables and arrange the turkey breast on top, breast side up.

  4. Lock the lid and push the steam valve to the sealing position. Then, press the High Pressure or Manual button and set the time for 36 minutes.

  5. Allow the turkey to naturally release for 10 minutes, then release the rest of the pressure by pushing the steam valve to venting.

  6. Carefully open the lid and allow to cool for 3 minutes before carefully transferring the turkey to a large baking sheet. 

  7. Broil the turkey for about 5 minutes, or until golden, watching closely that the skin does not burn.

  8. Slice and serve with roasted vegetables and cauliflower mash.
