Brownie Bites

These Brownie Bites are healthy no bake treats with a soft and fudgy center. They are easy to make with just a few ingredients. With a soft no bake brownie center and lightly coated in shredded coconut for a light and healthy dessert! Gluten-free, vegan, dairy-free, paleo with low carb and keto options.

Ingredients

For the Truffles

  • 1/2 cup creamy unsalted cashew butter , can sub with any nut butter or seed butter
  • 1/4 cup maple syrup OR sub with preferred liquid sweetener such as Lakanto sugar-free maple syrup,yacon syrup or just a few drops of pure liquid monk fruit.
  • 1 tsp vanilla extract
  • 1 cup superfine almond flour
  • 3 tbsp cacao powder
  • 1/2 tsp cinnamon
  • 1/8 tsp fine sea salt
  • 1/4 cup unsweeteend shredded coconut , toasted in a skillet over medium heat or on a baking sheet in the oven at 300F for 10-12 minutes or until golden, for extra flavor

For the Chocolate Coating

  • 1/2 cup chopped dairy-free quality chocolate OR chocolate gems, or dairy-free chocolate chips , we like Hu's Kitchen Gems OR Lily's Sweets
  • 1/2 tbp coconut oil

Optional toppings

  • hemp seeds, shredded coconut, finely chopped nuts, cacao powder, or Maldon sea salt

Instructions

  1. Line a baking sheet with parchment paper. Set aside.

  2. In a medium bowl, use a fork to mix the nut butter together with the maple syrup and vanilla. Slowly add in the almond flour, cacao powder, cinnamon and salt then continue stirring until the mixture resembles brownie batter. Add a little bit more nut butter or maple syrup if the mixture is too dry or add more flour if the mixture is too wet.

  3. Scoop out 1/2 tablespoon-sized dough and roll it into a ball, repeating with the remaining dough. Roll each brownie bite into a bowl with the shredded coconut.

    Place your truffles onto the prepared baking sheet and place the pan in the freezer for 10-15 minutes, or until firm.

  4. Meanwhile, add chocolate and coconut oil into a heat-safe bowl and melt over a double-boiler. Or, heat in the microwave in 20 second increments, mixing well in between, until smooth.

  5. Drizzle in a zig zag over each brownie bite and top with optional toppings.

    Return the pan to the fridge or freezer, for 10-15 minutes, or until the chocolate is set. Serve or store in an airtight container in the fridge or freezer.
