Ingredients

  • 3/4 cup almond milk , feel free to use preferred milk of your choice.
  • 2 tablespoons cashew butter , you can also sub with any other nut butter or seed butter of your choice.
  • 1 tablespoons flax seeds
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 tsp pure maple syrup , you can also sub with another sticky liquid sweetener of your choice. Use Lakanto sugar-free maple syrup, allulose, yacon syrup or Sukrin gold for a lower sugar or keto-friendly option.
  • 4 slices your favorite gluten-free OR keto bread , such as: aWg bakery, Base Culture, California Country Gal Sandwich, Solia or Slice of Life.

OPTIONAL TOPPINGS:

  • Maple syrup , vegan butter, coconut cream and / or fresh fruit

Instructions

  1. In a wide shallow bowl, beat together the cashew butter with flax seeds, milk, vanilla, pumpkin spice, cinnamon and salt until smooth and combined. You can also use a blender to get it super creamy and smooth.

  2. If using fresh bread, be sure to toast or bake it in the oven first before dunking it. This prevents the french toast from getting too soggy.

    Dunk your bread slices into the mixture and allow each slice to sit for at least 10 seconds to fully submerge and soak in mixture.

  3. Heat oil in a large frying pan over medium-high heat. Place each slice of bread in the pan. Fry each side until browned and slightly crispy, about 3-4 minutes. Flip and fry the other side for another 3-4 minutes, until crispy. Repeat until all pieces of bread are cooked.

  4. Serve warm with your favorite toppings.
