Air Fryer Roasted Potatoes

These Air Fryer Diced Potatoes are cubed potatoes made in the air fryer that bake up soft and fluffy on the inside with perfectly crispy edges. They make an easy, healthy and delicious side dish or appetizer for any occasion. Vegan, gluten-free, dairy-free and Whole30 compliant.

Ingredients

  • 1 pound gold Yukon potatoes , scrubbed and dried
  • 1 tablespoon avocado oil or olive oil
  • 1/2 teaspoon fine sea salt or kosher salt , or more to taste
  • ¼ teaspoon freshly ground black pepper , or more to taste, plus more for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/2 tablespoon fresh rosemary , finely chopped, plus more for garnish
  • 1/2 tablespoon fresh thyme , finely chopped, plus more for garnish
  • Lemon wedge for serving
  • Favorite dip for serving

Instructions

  1. If your air fryer requires preheating, preheat to 390 F degrees.
  2. Cut the potatoes into 1-2 inch evenly-sized cubes / chunks.

    Add the potatoes to a large mixing bowl. Drizzle with oil. Season with salt, black pepper, garlic powder, onion powder, paprika, fresh herbs and toss to thoroughly coat.

  3. Working in batches, add the potatoes to the air fryer basket spreading them in a single layer.

  4. Cook for 10 minutes, then open the air fryer basket and shake the basket or toss the squash. Air fry again for another 12-15 minutes, or until the potatoes are crispy, golden and fork tender (time will vary depending on your air fryer). Cook for 2 minutes more if you prefer your potatoes extra crispy. Repeat with any remaining potatoes.

  5. Transfer to a serving bowl.

    Serve hot and garnish with more fresh chopped herbs, a lemon wedge, and favorite dip.

Recipe Notes

How to Store

Store leftover potatoes in a well-covered, airtight container in the fridge. They’ll stay fresh for about 3-4 days.

How to freeze

Place the cooked potatoes on a large baking sheet and freeze for at least 20 minutes. Transfer to a large resealable freezer bag and store in the freezer for up to 3 months.

How to Reheat

When ready to reheat, place the frozen potatoes in the microwave, warming them up in the the oven at 350 F for 12 to 15 minutes or in a single layer in the air fryer basket at 365F and heat for 7-9 minutes or until desired crispiness.
