Avocado Egg Rolls

These Avocado Egg Rolls are a healthy twist on the Cheesecake Factory Egg Rolls made with gluten-free egg roll wrappers, creamy avocado and baked in the air fryer to crispy perfection! They're a fun and tasty appetizer or healthy snack and are dairy-free with vegan, grain-free, low carb, paleo and keto options.

Ingredients

  • 3 avocados halved, peeled and seeded
  • 1 Roma tomato diced
  • 1 tablespoons sun-dried tomatoes chopped
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro leaves
  • Juice of 1 lime
  • Fine grain sea salt or kosher salt to taste
  • Freshly ground black pepper to taste
  • 8 egg roll wrappers , for gluten-free, use Mom's Place Gluten-Free Egg Rolls & Wonton Wrappers. You can also use vegan and gluten-free puff pastrycoconut wraps (low carb, grain-free, paleo, keto) or rice paper wrappers (gluten-free + vegan).
  • Small bowl of water for sealing
  • Avocado oil spray or olive oil spray
  • Freshly chopped cilantro for garnish
  • Lime wedges for serving

For the Dipping Sauce

  • 3/4 cup fresh cilantro leaves loosely packed
  • 1/4 cup dairy-free thick Greek-style yogurt , may also sub with dairy-free sour cream (regular Greek yogurt or sour cream work too if not dairy-free). Use dairy-free cashew sour cream for paleo.
  • 1 small jalapeno seeded, optional
  • 2 tablespoons vegan mayonnaise , or sub with avocado oil mayonnaise
  • 1 clove garlic
  • Juice of 1 lime
  • Fine grain sea salt or kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a large bowl, add the avocado and gently mash using a fork or potato masher.

  2. Add tomato, sun-dried tomatoes, red onion, cilantro, lime juice, salt and black pepper and mix to combine.

  3. Working with 1 egg roll wrapper at a time, place each egg roll wrapper on a clean flat surface. Place each wrapper with the points facing up (like a diamond). Dip your finger or use a brush to brush along the edges of the wrapper. Fill each wrapper with about 2-3 tablespoons of avocado filling near the bottom third of the wrapper, being careful not to over fill. Lift the bottom edge of the wrapper tightly over the filling, then fold in the right and left corners towards the center. Continue rolling up tightly until the top of the wrapper is reached. Repeat with remaining wrappers and avocado mixture.

  4. Spray the air fryer with oil spray. Working in batches as needed, place the egg rolls in the basket in a single layer and spray the tops of the egg rolls with the oil spray. Cook at 395 degrees for 6 minutes. Then flip the egg rolls and lightly spray with oil spray. Cook for an additional 5-8 minutes, or until golden brown and crispy, being careful not to overcook and burn.

  5. While the egg rolls are cooking, make the dipping sauce by combining the yogurt, mayonnaise, cilantro, jalapeno, garlic and lime juice in a bowl of food processor or a small blender. Season with salt and black pepper to taste. Blend until smooth and adjust seasonings to taste.

  6. Remove the egg rolls and transfer to a plate or serving platter. Garnish with freshly chopped cilantro and lime wedges. Serve with dipping sauce on the side.

Recipe Notes

  • To Make Ahead:

    Make the filling and dip ahead of time and store separately in an airtight container in the fridge for up to 3 days.

    You can also assemble the rolls. The rolls can be made up to 3 days ahead of time and kept in an airtight container in the fridge. Air fry right before you serve them.

  • To Store Extras: Store any leftover egg rolls in an airtight container in the refrigerator. They'll stay fresh for up to 3 days.

    The creamy cilantro sauce can be refrigerated in an airtight jar or container for up to 1 week.

How to Freeze

Place them in a single layer in an airtight container and store in the freezer for up to 3 months.

How to reheat

Reheat them directly from the freezer without having to thaw them out in the fridge. 

  • Microwave: Microwave on medium high for 2-3 minutes, or until warm.
  • Air Fryer: Air fry at 325F for 2-3 minutes, or until crispy, flipping half way through.
  • Oven: Bake at 350F for 8-12 minutes, or until warm and crispy, flipping half way through.
