These Air Fryer Oatmeal Cookies are soft, chewy and so easy to make in one bowl without any eggs, dairy or refined sugar. This single serve cookie can easily be doubled or tripled and is cooked in the air fryer in under 10 minutes with oven instructions.
Air Fryer Version: If your air fryer requires preheating, preheat to 360°F (or preheat oven to 350°F).
Oven Version: Preheat the oven to 350°F. Line a small baking sheet with parchment paper. Set aside.
Shape the mixture into a round ball and form into a cookie shape, using your palm to gently press the top of the cookie down slightly so it is not too puffy. Press more chocolate chips into the cookie, if desired (also makes the cookie more aesthetic).
Air Fryer Version: Lightly spray the air fryer basket with cooking spray of choice. Place the cookie in the air fryer basket. Air fry for 8-10 minutes, or until the cookie is set to your liking, watching carefully it does not burn.
Oven Version: Place the cookie on the lined baking sheet. Bake for 13-15 minutes, or until the cookie is set to your liking, watching carefully it does not burn.
Storage and Freezer Instructions
These cookies can be stored at room temperature or kept in the fridge. Just place them in an airtight container once they’ve cooled completely. They will last for up to 5 days on the counter or up to 10 days in the fridge.
How to Freeze the Cookie Dough
Place the cookie dough in a freezer-safe bag and squeeze all the air out. You can freeze the dough as one flattened mass or individual cookie portions. Within 1 or 2 months, thaw out the dough in the fridge, then bake the cookies. You may have to add a couple minutes to the bake time if your dough is still cold; just be careful not to overbake the cookies.
How to Freeze Baked Cookies
In a freezer-safe bag or container, store the cooled cookies. Place them in the freezer and enjoy them within 3-4 months. Thaw frozen cookies in the fridge overnight before enjoying. You can bring them to room temperature, if desired.
