Yogurt Covered Blueberries

Ingredients

  • 1 cup fresh blueberries carefully washed and dried well
  • ½ cup dairy-free plain or vanilla Greek-style yogurt , can also use a thicker-style coconut yogurt base such as Culina, Cocojune or Yoggu (use less or more as needed - feel free to use flavored yogurt if preferred)

Optional if using plain yogurt

  • ½ tsp vanilla extract , only if using plain yogurt
  • 1/2-1 tsp maple syrup , only if using plain yogurt - can sub preferred sticky liquid sweetener, optional for added sweetness - (use less or more as needed)

For optional chocolate drizzle:

  • Melted dairy-free or regular chopped chocolate or chocolate chips of choice

Equipment

  • Toothpicks , optional for dipping, can also use a spoon - see Step 3 of instructions

Instructions

  1. Line a baking sheet with parchment paper or wax paper.
  2. If using plain yogurt, place in a bowl and mix with vanilla and optional sweetener until smooth.

  3. Use a toothpick or a tiny fork to pick up one berry then dip into the yogurt and swirl around until well coated. (For easier preparation, add the blueberries into the yogurt bowl and mix well until all the berries are coated well).

  4. Place the coated berries on the parchment paper in a single layer. Repeat with the remaining berries.

  5. If using the chocolate drizzle, melt the chocolate in a heat-safe bowl over a double boiler on the stovetop or in the microwave in 15-second increments, stirring well in between. Drizzle some of the berries with chocolate in a zig-zag pattern.

  6. Place the baking sheet in the freezer and freeze for about 1 hour, or until solid. Eat immediately or let it thaw for 2-3 minutes until softer. Transfer any remaining blueberry bites to an airtight container and store in the freezer.
