Snickers Cookies

These Snickers Cookies are a delicious and wholesome twist on the classic candy bar with creamy peanut butter, maple sugar, almond flour, a chewy nougat filling and melty chocolate that is sure to satisfy any sweet cravings!

Ingredients

  • 1 cup natural creamy peanut butter , you can also sub with cashew butter or another nut butter or seed butter of your choice
  • 1 large egg room temperature
  • 1 cup granulated maple sugar , you can also sub with another lower sugar granulated sweetener of your choice such as monk fruit sweetener, Swerve or even regular granulated cane sugar
  • 3 tbsp superfine blanched almond flour , you can also sub with gluten-free oat flour, cassava flour or gluten-free 1-to-1 baking flour. All purpose flour works too if you're not gluten-free.
  • 1 cup melted dairy-free or regular chopped chocolate or chocolate chips
  • 1 cup vegan caramel sauce , or regular caramel sauce
  • 1/2 cup finely chopped roasted salted peanuts you can also sub with cashews or other chopped nuts of your choice

Marshmallow Filling (can use healthier filling recipe (see below)):

  • 1 cup vegan marshmallows , regular marshmallows will work too
  • 1/4 cup sweetened coconut milk condensed milk , regular condensed milk works too
  • 1 teaspoon natural creamy peanut butter , you can also sub with cashew butter or another nut butter or seed butter of your choice

OR Alternative Slightly Healthier Filling:

  • 1/4 cup tahini
  • 2 tbsp maple syrup , you can also sub with another stick liquid sweetener of choice
  • 2 tsp natural creamy peanut butter , you can also sub with cashew butter or another nut butter or seed butter of your choice

Instructions

  1. In a large bowl, mix together the peanut butter, egg, sugar and flour together until combined.

  2. Form dough into 1 tablespoon size balls onto a cookie sheet, leaving about 2 inches between cookies. Press thumb into the center to create an indent. Bake in preheated oven for 7-8 minutes.
  3. Remove from oven and press indent again if necessary. Allow the cookies to rest for 5 minutes on baking sheet then transfer to cooling rack to cool completely before filling.

Marshmallow Filling:

  1. In a medium saucepan over medium heat or in a microwave safe bowl, heat marshmallows until completely melted then stir in sweetened condensed milk until smooth and combined. Stir in peanut butter then allow to cool slightly and thicken.
  2. For the slightly healthier filling, just combine the tahini, maple syrup, and peanut butter until smooth.

Assemble cookies

  1. Spoon 1 teaspoon of filling and spread over the center of each cooled cookie. Drizzle with melted chocolate, caramel sauce and add a sprinkle of chopped peanuts. Allow to dry and set.

Recipe Notes

Refrigeration: These Snickers Cookies are perfect for making ahead. Store them in an airtight container at room temperature for up to a week.

Freezing: For longer storage, freeze them in an airtight container for up to three months.
