Blueberry Popsicles

These Blueberry Popsicles are healthy, delicious and the perfect frozen treats for summer. Best of all, this easy recipe is made with only a few ingredients that are packed with blueberries and coconut flavor. This recipe is suitable for anyone who is looking for a vegan, dairy-free, refined sugar-free, or paleo-friendly option.

  • 1 14-ounce can of full-fat coconut milk
  • 2 cups fresh or frozen blueberries


  • 2-3 tablespoons liquid sweetener , we used maple syrup but you can use Lakanto sugar-free maple syrup or honey if not vegan
  • homemade paleo granola , for topping



  1. In a large bowl whisk together 2.5 Tbsps liquid sweetener with coconut milk until smooth - use more or less depending on your preference. Fill popsicle molds halfway. Freeze for 30 minutes.

  2. Meanwhile, add blueberries to a blender with 2 tsp liquid sweetener or water & blitz until smooth (or alternatively mash berries in a saucepan over medium heat).

  3. Remove popsicle mold from freezer, spoon blueberry mixture evenly between the popsicles. Layer with remaining coconut mixture. Freeze for 30 minutes.

  4. Top with optional granola and insert wooden popsicle stick. Freeze for about 4 hours or until set. 

  5. To remove popsicles, run the clear part of the popsicle mold under hot water and firmly pull out the handle.

  1. Add coconut milk, sweetener (if using) and blueberries to a blender. Blend until smooth then fill popsicle molds evenly between each popsicle. Freeze for 30 minutes.

    Top with optional granola and insert wooden popsicle stick.

    Freeze the popsicles with the sticks inserted for about four hours or until blueberry pops are set.
