Buffalo Chicken Sliders

These Buffalo Chicken Sliders are easy to make with tender chicken, buffalo sauce and gooey cheese over gluten-free Hawaiian-style rolls. They come together in less than 30 minutes and make the perfect snacks and appetizers for feeding a crowd. Includes gluten-free, low carb, keto and dairy-free options.⅕⅕

Ingredients

For the Sliders:

  • 3 cups shredded cooked chicken rotisserie slow cooked or grilled
  • 1/3 cup buffalo sauce , we like Frank's
  • 4-6 slices mozzarella cheese plus more for topping
  • 1 12-count package Hawaiian or Soft Dinner Rolls Soft King’s Hawaiian rolls are always a hit with my guests that have no dietary issues. To make Keto Ham and Cheese Sliders, we will use these paleo, grain-free keto rolls from Unbun or these Carb Wise rolls from Slice of Life
  • crumbled feta for topping - use vegan feta from Miyokos for Dairy-Free

For the Melted Butter Topping:

  • 2 Tablespoons butter melted , melted - to keep this dairy-free, use vegan butter. We like Miyokos.
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried basil

Choice of toppings:

  • Romaine lettuce
  • Cucumber slices tomato slices, onion slices, olive slices

Instructions

Make the Sliders:

  1. Split your slider buns in half. Then place one half in the bottom of a 11x7" or 9 x 13 greased baking dish.

    Combine shredded chicken with buffalo sauce. Layer the bottom half of the buns with shredded chicken, crumbled feta and a layer of fresh mozzarella slices.

  2. Make the melted butter topping: In a small bowl, Mix together the butter with garlic powder and Italian seasoning.

  3. Place the top buns in on top and brush on some melted garlic butter on top. Cover with a sheet of aluminum foil and bake in preheated oven for about 12-15 minutes or until cheese is gooey and melted.

  4. Slice into individual sliders and serve immediately with a sprinkle of grated Parmesan, if desired. Sliders are best warm and fresh.
