Kale Salad with Avocado and Caesar Dressing

This Kale Salad is so easy to make and is a healthy twist on the Classic Caesar Salad. It's the perfect side or lunch for spring and summer potlucks, barbecues, picnics and parties. Packed with kale, creamy avocado, grilled chicken with a homemade Caesar dressing that is low carb, keto and Whole30 compliant.

For the dressing:

  • 1 medium avocado divided
  • 1/4 cup Whole30 mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1/4 cup water , plus more to reach desired consistency

For the salad:

  • 2 teaspoons avocado OR olive oil
  • 1 bunch kale stems removed, chopped (5–6 cups)
  • 1 avocado , cut into slices
  • 1/4 teaspoon black pepper


  • 1 tablespoon microgreens , for garnish
  • 1/2 teaspoon hemp seeds , for topping
  • 4 oz cooked chicken breast
  • 1 tablespoon crumbled feta OR grated Parmesan , if not Whole30 / Paleo`


Make the dressing:

  1. Add the avocado, mayo, lemon juice, Dijon mustard, garlic, salt and water to a blender or a food processor. Process until smooth, add more water as needed to reach desired consistency. Taste and adjust seasonings.

For the salad:

  1. PREP & MASSAGE KALE: Remove and discard the hearty stems and tear or chop the kale leaves into thin piece and place in a large bowl. Drizzle with oil & a pinch of salt and use your hands to massage until the leaves start to soften and wilt.

    ADD DRESSING AND ASSEMBLE SALAD. Drizzle with dressing, black pepper and toss lightly to coat. Top with avocado and optional toppings of choice.
