Pumpkin Spice Latte

Ingredients

  • 3/4 cups unsweetened almond milk
  • 2 tbsp coconut cream OR heavy cream (if not paleo)
  • 1 tbsp pumpkin puree
  • 1 tsp pumpkin pie spice mix
  • 1/2 tsp vanilla extract
  • 2 tsp paleo OR low carb sweetener , to taste (coconut sugar, monk fruit sweetener, maple syrup or preferred sweetener)
  • 1/2 cup espresso OR strongly brewed coffee , hot or cold

FOR TOPPING (OPTIONAL):

  • 1 tablespoons whipped coconut cream OR whipped heavy cream if not vegan / dairy-free
  • 1/2 teaspoon pumpkin pie spice for sprinkling
  • paleo or keto caramel sauce
  • sugar free chocolate shavings , we use Lily's sweets or Hu's Kitchen

Instructions

  1. Heat 1/4 cup of the almond milk, coconut cream, pumpkin puree, sweetener and pumpkin pie spice in a small saucepan over medium heat or in the microwave for 30 seconds, until spices and sweetener dissolves when stirred. Remove from heat and stir in vanilla and hot espresso.

  2. Pour into a large mug or divide into two small mugs.Steam remaining milk (using a frother, on the stove or in the microwave) and add to the espresso mixture.

  3. Garnish with whipped coconut cream, a sprinkle of pumpkin pie spice and sugar free keto caramel, if desired.

Recipe Notes

NOTE: Nutritional value includes whipped coconut cream minus the keto caramel.

With 1 teaspoon of keto caramel, just add 9 calories and 1g fat.
