Roasted Green Beans

These roasted green beans are fresh, healthy, and the perfect side dish at Thanksgiving or Christmas. They only use a few ingredients, and take less than half an hour to make.

Ingredients

  • 1 lb fresh green beans trimmed (make sure they are dry)
  • 2 tablespoons avocado oil OR olive oil
  • 1/3 teaspoon fine sea salt or more to taste
  • 1/4 teaspoon freshly cracked black pepper or more to taste
  • 1/4 teaspoon garlic powder , optional
  • 1/8 tsp onion powder , optional

OPTIONAL TOPPINGS:

  • 1/4 cup toasted chopped pecans
  • 1/4 cup toasted sliced almonds

Instructions

  1. Preheat the oven to 425°F. Grease or line a baking sheet with parchment paper for easy clean-up.

  2. Place green beans on the baking sheet and drizzle with oil. Season with salt, pepper, garlic powder and onion powder and toss to evenly coat.

  3. Spread green beans out evenly on the pan and bake in preheated oven for 15-18 minutes. Shake and turn the pan halfway through. For crispier beans, broil for 1 minute, watching closely so they do not burn.

  4. Remove from the oven and sprinkle with toasted nuts, if desired.
