Heat the oil in a large skillet over medium-high heat until shimmering.
Add the trimmed green beans and cook, stirring often, until the beans are bright and glossy and slightly brown.
Add the garlic and season with salt, black pepper and optional seasonings. Cook, stirring constantly, until the garlic is fragrant, about 30 seconds.
Add water and cover with lid. Cook for another 1-2 minutes until the beans are bright green and crisp-tender.
Season to taste as needed and serve with toasted nuts and lemon wedges, if desired.
