Keto Chocolate Turtles

These Healthy Chocolate Turtles are easy to make and the perfect homemade candy for the holidays! A vegan version of the classic made with pecans, refined sugar-free caramel and dairy-free chocolate!

Ingredients

  • 60 pecan Halves , plus more for garnish if desired
  • 15 smaller pecan pieces for the head
  • 1/3 cup pecan butter OR sunflower seed butter
  • 1/4 cup powdered monk fruit sweetener OR powdered coconut sugar for paleo (can also sub with pure / Lakanto sugar free maple syrup plus 1 tablespoon superfine almond flour to firm up the dough)
  • 2 tsps vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/3 cup sugar-free chocolate chips OR dairy-free chocolate chips
  • 1 tablespoon coconut oil
  • sea salt , optional for garnish

Instructions

  1. PREPARE YOUR BAKING PAN: Line a baking sheet with parchment parchment paper.
  2. ARRANGE YOUR PECANS: Place 4 pecan halves around the same size and arrange them into clusters. Use one smaller pecan piece for the head.

  3. MAKE YOUR CARAMEL: Combine the pecan butter with sweetener, vanilla extract and ground cinnamon and mix until smooth. If using maple syrup - be sure to add the almond flour to firm up the dough. If the mixture is too runny to form into a ball, place in the freezer for 5-10 minutes. Form into 2/3 Tbsp sized discs and place on top of pecan clusters.

  4. MELT CHOCOLATE. Melt the chocolate and oil in a double-boiler over the stove or in a heat-safe bowl in the microwave in 10 second increments, stirring well in between. Spoon a small amount of chocolate on top of each turtle. Add a sprinkle of sea salt & garnish with a pecan, if desired. Allow the chocolate to set up – you can place the pan in the fridge or freezer to speed things up.
