Creamy Cauliflower Mash

Ingredients

  • 1 medium head cauliflower , cut into florets & rinsed & drained
  • 1/2 tsp salt
  • 1/2 tsp minced garlic
  • 1 1/2 tbsp ghee or sub unsalted grass-fed butter or vegan butter if plant-based
  • 2 tbsp unsweetened almond milk
  • 1 handful fresh chopped parsley or chives

Instructions

  1. Steam or boil cauliflower in a large pot for about 8-10 minutes, or until soft. Drain.

  2. Return the same large pot back to the burner and heat 1 tablespoon ghee on medium heat.

  3. Add the garlic and cook for 20 seconds, or until fragrant then stir in the drained cauliflower back in.

  4. Remove pot from heat and add salt along with remaining ghee and milk.

  5. Transfer to a food processor or use a handheld immersion blender to mash, until desired consistency. Season with more salt and black pepper, to taste.

  6. Sprinkle with chopped herbs and extra ghee or butter, if desired.
