Waffle cereal is a fun twist on mini pancake cereal, the latest TikTok trend. It's easy to make using your favorite waffle batter and you can serve them with any toppings you like! The homemade waffle batter uses simple pantry-friendly ingredients and is also gluten-free, paleo and keto-friendly.
Make your favorite waffle batter according to instructions or follow instrutions below.
In a large mixing bowl, beat the eggs or egg yolks** then whisk in the almond butter, sweetener, milk, apple cider (if using) and maple or vanilla extract.
Add the almond flour, coconut flour, baking powder and cinnamon. Mix until smooth and just combined - do NOT overmix.
Allow the batter to thicken up 3-5 minutes while you preheat the waffle maker. This allows the baking powder to activate.
Preheat the waffle maker and spray generously with pure coconut oil spray (or olive oil spray).
Spoon in one or two 1 tablespoon-sized dollops in your waffle iron, making sure to leave enough space between them. Close the lid and cook until waffle light turns green (about 4-5 minutes depending on your waffle maker). Allow to sit for 15 seconds, then transfer the crispy waffles onto a plate.
Repeat with remaining batter.
Serve with your favorite toppings and sides: milk, melted butter, low carb syrup or fresh berries.
