If you like chocolate chip cookies and milk, you have to try this Cookie Cereal! With my easy vegan chocolate chip cookie recipe, everyone can enjoy dessert for breakfast!

  • 1/3 cup softened refined coconut oil or sub vegan butter
  • 1/3 cup coconut sugar
  • 1/3 cup maple syrup or sub with Lakanto sugar-free maple syrup
  • 1 tsp vanilla
  • 2/3 tsp baking powder
  • 1 1/3 cups superfine almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp cinnamon
  • 1/3 cup dairy-free mini chocolate chips , we like Lily's Sweets, Santa Barbara or Hu's Kitchen


  1. Preheat the oven to 350°F. Line two baking trays with parchment paper and set aside. In a medium bowl, mix coconut oil and coconut sugar using a fork until combined. Stir in maple syrup and vanilla until smooth.

  2. Add baking powder, almond flour, coconut flour and cinnamon until dough is combined. Fold in chocolate.

  3. Using your hands, form tiny teaspoon-sized balls of dough. Place on the lined baking trays and press each one into a cookie shape. Bake for 7-8 minutes, or until golden on the edges.

  4. Remove from the oven and allow to cool on the pans completely. Serve in bowls with milk or alone along with any other toppings. 

Recipe Notes

Use refined coconut oil if you don't want a hint of coconut flavor in your cookies
