Dalgona Matcha

This Dalgona Matcha recipe is made with just 4 simple ingredients and a delicious twist on the popular Korean coffee known as Dalgona Whipped coffee that is trending on TikTok and Instagram. This healthy whipped matcha is refined sugar free and vegan with paleo and low carb sweetener options.

Ingredients

  • 6 tablespoons aquafaba , can also sub with 1/2 cup chilled coconut cream or heavy whipping cream if not dairy-free
  • 1/4 tsp cream of tartar , leave out if using coconut cream or heavy cream
  • 1-2 tablespoons granulated paleo sweetener , such as maple sugar OR coconut sugar. You can also use granulated monk fruit sweetener, powdered stevia or granulated sugar instead. (read my blog post for tips)
  • 2 tablespoon matcha powder

  • hand mixer OR stand mixer

Instructions

  1. Using a hand mixer or a stand mixer, beat the aquafaba (or coconut cream or whipping cream) on high speed until it starts to foam up (or reaches stiff peaks), about 5 minutes.

    Stop the mixer then add the cream of tartar, sugar, and matcha powder. Turn your mixer to low and slowly start to beat until the matcha powder is incorporated then increase the power to medium until thickened and glossy.

  2. Fill a stemless wine glass with ice and milk until it's about 3/4 full. Top with whipped matcha.
