Sweet Potato Toast

Ingredients

  • 1-2 medium sweet potatoes washed and dried
  • Avocado oil or cooking spray of choice

Topping choices

  • Nut butter
  • Dairy-free cream cheese or regular if not dairy-free
  • Sliced peaches
  • Sliced strawberries
  • Fresh blueberries blackberries or raspberries
  • Sliced figs
  • Avocado slices
  • Grape tomatoes halved
  • Sticky liquid sweetener use your favorite: maple syrup but you can sub with any sticky liquid sweetener such as date syrup coconut nectar syrup, yacon, sugar-free syrup, organic agave syrup or honey if not vegan
  • Chopped nuts
  • Chopped fresh herbs / microgreens

Instructions

  1. Preheat the oven or 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

  2. Slice the ends off of a medium sweet potato. Place the sweet potato on one flat end. Carefully slice the potato into about ¼ inch - ½ inch even slices.
  3. Arrange the sliced sweet potatoes in a single layer on the baking sheet. Lightly spray or brush each slice with oil.

    Bake in the preheated oven for 8 minutes. Flip the potatoes and bake for 5-8 minutes more, depending on desired doneness.

  5. Garnish your sweet potato toast with a mix of toppings of choice.

Air Fryer Method

  1. If your air fryer requires preheating, preheat to 375F. Air fry for 15 minutes, or until desired doneness, flipping halfway through.

Toaster Method

  1. Toast the slices in a toaster until desired doneness. This may require 3-4 cycles.

Raspberries and Yogurt

  1. Place a tablespoon of dairy-free yogurt on each sweet potato toast slice and spread evenly.

    Add 4 fresh raspberries or other season berries to each sweet potato toast. Top with your favorite liquid sweetener, if desired and some chopped walnuts.

Tomatoes and Cream Cheese:

  1. Carefully slice 3-4 cherry tomatoes into halves.

    Place a tablespoon of dairy-free cream cheese on each sweet potato toast slice and spread evenly.

    Arrange the tomatoes on top of cooked sweet potato toast. 

    Season the sweet potato toast with salt and pepper. You can also add Everything Bagel Seasoning or fresh or dried parsley fakes.

Berries and Almond Butter

  1. Place a tablespoon of nut butter on on each sweet potato toast slice and spread evenly.

    Add one sliced strawberries and 3 blackberries or other seasonal berries to the sweet potato toast. 

Figs and Almonds

  1. Carefully slice one fig into thin slices. Place on top of each cooked sweet potato toast.

    Top with your favorite liquid sweetener, if desired and some slivered almonds.

How to store: Place any leftover toast (minus the toppings) in an airtight container and store in the refrigerator for up to four days.

Enjoy the toast either cold or warm in the microwave for a few seconds!

How to freeze: Place any leftover toast (minus the toppings) in an airtight container and store in the freezer for up to three months.

How to reheat: Bake in the oven, air fry or toaster oven at 315F until warm, air fry at 315F until warm. Microwave on high for 30 seconds or more until warm.
