These Gluten Free Apple Cider Donuts are soft, tender and perfectly spiced with warm cinnamon, nutmeg and fresh apple cider. REDUCE THE APPLE CIDER: Add apple cider to a small saucepan over low heat. Simmer for about 8 minutes while stirring occassionally, until you’re left with about 1/3 cup.
Preheat the oven to 350 degrees. Lightly grease a donut pan with non-stick spray or place a silicone donut pan on a baking pan. Set aside.
In a large bowl, beat together the eggs, then whisk in the coconut oil, apple cider, apple cider vinegar and maple sugar.
Place a large mesh sieve and sift in the the almond flour, coconut flour, spices, baking powder and salt. Stir with a wooden spoon until well combined.
Spoon the batter into the donut pan, filling to the top.
Bake in preheated oven for 17-21 minutes (depending on your oven) or until donuts are set. Allow to cool for at least 30 minutes before coating with cinnamon sugar topping.
In a medium bowl, combine the sugar and cinnamon. Lightly brush each donut with coconut oil, and sprinkle or dip the donuts in the cinnamon/sugar mixture. Place on parchment paper
