Vegan Hot Chocolate

This Vegan Hot Chocolate is rich, creamy and so easy to make with just 4 simple ingredients! It is the perfect healthy and cozy drink to snuggle up with on a winter evening. It is naturally gluten-free, paleo, dairy-free, refined-sugar free and can easily be made low carb or keto with your favorite sweetener. Now everyone can enjoy a comforting homemade cup of hot cocoa!

Ingredients

  • 1 cup creamy unsweetened almond milk , or sub with any non-dairy milk - we like Malk Organics since it's rich, creamy and has no additional fillers or gums
  • 1/2-1 tbsp cacao powder , may also sub with unsweetened cocao powder
  • 1/2 -1 tbsp maple syrup , sub with Lakanto sugar-free maple syrup or yacon syrup for low carb/Keto.
  • 1/4 tsp pure vanilla extract
  • tiny pinch of sea salt

Optional toppings

  • coconut whipped cream, marshmallows, shaved chocolate

Instructions

  1. In a medium saucepan or pot, whisk together the almond milk and cacao powder over medium high heat, while continuously whisking to break up any clumps and until smooth.

  2. Once the mixture is smooth, whisk in the sweetener, vanilla and salt. Continue simmering until the mixture is hot and bubbly. Taste and add more sweetener, as needed.

  3. Pour into a mug and top with coconut whipped cream, marshmallows and shaved chocolate, if desired.
