Air Fryer Baked Potatoes

These soft and fluffy Air Fryer Baked Potatoes have perfectly crispy skin, just as if they were roasted in the oven. Only this recipe makes it quicker and easier than ever!

Ingredients

  • 2 medium russet potatoes 8-10 oz each; scrubbed, rinsed & dried
  • 1 tsp avocado oil
  • 1/2 tsp coarse sea salt plus more for serving

Optional Toppings

  • coarse salt and freshly cracked black pepper
  • vegan butter or ghee; you can use grass-fed butter if not dairy-free
  • fresh chopped parsley or chives

Instructions

  1. Preheat the air fryer to 400°F.

  2. Use a fork to pierce the potatoes all around.

  3. Drizzle or brush the potatoes with oil and rub with your hands to coat all around.

  4. Season with salt.

  5. Place the potatoes in the air fryer basket and roast for 40-50 minutes, or until the potatoes are tender and can be pierced easily with a fork.

  6. Use tongs to remove the potatoes from the air fryer, then cut each one lengthwise to split.
