Watermelon Slushie

This Watermelon Slushie is easy to make with just 3 ingredients. It's sweet, refreshing and the perfect healthy drink to cool you down on a hot summery day! Naturally gluten-free, vegan, paleo with no refined-sugar.

Ingredients

  • 5-6 cups cubed seedless watermelon , about 1 medium seedless watermelon, diced and frozen for at least 4 hours
  • 2-3 tablespoons pure maple syrup , or sub with Lakanto SF maple syrup, 1-2 drops of pure liquid monk fruit or preferred sticky liquid sweetener. Leave out for Whole30.
  • 2 tablespoons fresh lime juice , (about 1 medium lime)
  • 1/4 - 1/2 cup filtered water , add only as much as needed until desired consistency is reached

Optional Garnish

  • Fresh mint or fresh basil leaves

Instructions

  1. In a food processor or blender, add the watermelon, maple syrup, lime and 1/4 cup of water. Blend until there are no chunks and the mixture becomes the consistency of a thick slushie.

  2. Taste and add more sweetener, as needed. Add a little bit more water, if the mixture is too thick or some shaved ice as needed until desired consistency is reached.

  3. Divide equally into glasses, serve, and garnish with some fresh mint or basil.
