These Air Fryer Roasted Sweet Potatoes are cubed potatoes made in the air fryer that bake perfectly crispy on the outside and tender and fluffy on the inside. They are the perfect easy side dish and naturally paleo, vegan, grain-free, gluten-free and Whole30 compliant.
Working in batches, add the sweet potatoes to the air fryer basket spreading them in a single layer.
Cook for 7 minutes, then open the air fryer basket and shake the basket or toss the squash. Air fry again for another 5-8 minutes or until the potatoes are tender, with some char on the edges.
Transfer to a serving bowl, sprinkle with some large flakey salt and fresh parsley and serve with guacamole or favorite dip.
How to Store and Reheat Leftovers
Store leftover sweet potatoes in a well-covered, airtight container in the fridge. They'll stay fresh for about 3-4 days.
How to Freeze
Place the cooked sweet potatoes on a large baking sheet and freeze for at least 20 minutes. Transfer to a large resealable freezer bag and store in the freezer for up to 3 months.
