Grated Egg Toast

This Grated Egg Toast is taking over social media and the world by storm and will start your day on a high note! This new viral TikTok trend is made with crispy sourdough toast topped with a creamy avocado mash, fluffy hard-boiled egg shavings and flavorful seasonings in this protein-packed breakfast! Our version is dairy-free with paleo, low carb and keto-friendly options.

Ingredients

  • 2 hard-boiled eggs cooled and peeled
  • 2 slices thick gluten-free sourdough bread or bread of your choice. , Gluten-free, grain-free, keto or paleo if needed. We like AWG Bakery's Everyday Loaves or BaseCulture’s Grain-Free SourDough bread which are all low carb, paleo and keto-friendly.
  • ½ tbsp slightly softened dairy-free or regular unsalted butter for each slice, or more or less to taste
  • 1 ripe avocado
  • sea salt or kosher salt, to taste
  • 1 tsp fresh lemon juice
  • freshly cracked black pepper to taste
  • everything bagel seasoning
  • red pepper chili flakes

Instructions

  1. Boil the eggs and add them to an ice water bath to cool down completely. Once they are cold you can peel them and set them aside.

  2. Spread the butter on each slice of bread.

  3. In a hot pan place the slices of bread butter side down and toast until golden and crisp, then remove them from the heat.

  4. Cut the avocado in half and remove the pit. Mash the avocado into a medium bowl and season with salt and lemon juice.

  5. Spread the mashed avocado on top of each slice of toast.

  6. Use a grater to gently grate the eggs on top of each toast.

  7. Season with freshly cracked black pepper, everything bagel seasoning and red pepper chili flakes.

    Serve and enjoy.
