This Rice Cake recipe is a twist on the new rice cake trend that is taking over social media by storm. This new viral TikTok trend is made two different ways with your favorite toppings and is the perfect healthy snack or dessert! Our versions are dairy-free, refined sugar-free, plant-based, gluten-free and dairy-free.
In a medium bowl, mix together the nut butter, sweetener, vanilla and optional collagen / protein powder until smooth and combined.
Spread in an even layer on each rice cake. Top each rice cake evenly with some roughly chopped cashews / peanuts.
