Chocolate Rice Cake

This Chocolate Rice Cake recipe is a Snickers twist on the new Reece's Chocolate Peanut Butter rice cake trend that is taking over social media by storm. This new viral TikTok trend is made with cashew butter, maple syrup, cashews and melted vegan chocolate.

Ingredients

  • 2 rice cakes , we like these organic brown rice cakes but you can use any rice cakes, thin rice stackerscorn thins or even your favorite grain-free crackers if you're not a fan of rice cakes.
  • 3 tbsp creamy cashew butter , you can sub with peanut butter (mimics the Snickers flavor the best) but you can use any nut / seed butter of choice)
  • 1-2 tsp date syrup, maple syrup , or sub with your favorite sugar-free or any sticky liquid sweetener of your choice. Add more or less to taste, plus more for topping
  • 1/2 tsp vanilla extract
  • ½ - 1 tsp plant-based unflavored or vanilla protein powder , or plant-based collagen powder. We like NuZest Just Clean or Sprout Living Pea Protein but you can use your favorite. Optional for added protein. 
  • Roughly chopped cashews (or sub peanuts)
  • 1/2 cup dairy-free semi-sweet or dark chocolate chips, melted  , melted. Can also use regular chocolate chips or chopped chocolate.
  • Large flaked sea salt for garnish
  • Finely chopped cashews (or sub peanuts) for garnish

Instructions

Snickers Version

  1. In a medium bowl, mix together the nut butter, sweetener, vanilla and optional collagen / protein powder until smooth and combined.

  2. Spread in an even layer on each rice cake. Top each rice cake evenly with some roughly chopped cashews / peanuts.

  3. Melt the chocolate chips in a heat-safe bowl in a double-boiler or microwave in 20-30 second increments until melted and smooth.

  4. Spread evenly over each rice cake. Then sprinkle each with a tiny pinch of flakey sea salt and finely chopped nuts.

  5. Place the rice cakes in the freezer for 15-25 minutes, or until the chocolate has set.

    Enjoy or store in the fridge if not eating immediately.
