This Chocolate Rice Cake recipe is a Snickers twist on the new Reece's Chocolate Peanut Butter rice cake trend that is taking over social media by storm. This new viral TikTok trend is made with cashew butter, maple syrup, cashews and melted vegan chocolate.
In a medium bowl, mix together the nut butter, sweetener, vanilla and optional collagen / protein powder until smooth and combined.
Spread in an even layer on each rice cake. Top each rice cake evenly with some roughly chopped cashews / peanuts.
Melt the chocolate chips in a heat-safe bowl in a double-boiler or microwave in 20-30 second increments until melted and smooth.
Spread evenly over each rice cake. Then sprinkle each with a tiny pinch of flakey sea salt and finely chopped nuts.
Place the rice cakes in the freezer for 15-25 minutes, or until the chocolate has set.
