Spray the air fryer basket with oil and pat the chicken dry with a paper towel. Season chicken with salt and black pepper on both sides.

Mix the almond milk and vinegar, and allow to sit until curdled. Whisk in the eggs until combined. In another bowl, add the almond flour, Parmesan, garlic powder, paprika, sea salt and black pepper.

Dredge chicken pieces, one at a time, in the flour mixture, then dip in the buttermilk mixture and dredge in the flour mixture once again. Then place the chicken in the air fryer basket and spray with oil.

Cook for 15 minutes, then flip and spray with oil again, ensuring all the flour spots are covered. Continue cooking until the chicken is golden brown and reaches an internal temperature of 165F.

Sprinkle with fresh chopped parsley and your favorite dipping sauce. Enjoy!
