Cucumber
Asparagus
Lemon Juice
Dijon Mustard

VINAIGRETTE
Grape Tomatoes
Parsley
Avocado Oil
Shallots
Mint
Rosemary
Make the dressing; whisk until all vinaigrette ingredients are combined
INSTRUCTIONS
Air fry for 5 minutes at 375F; or blanche, sauté or roast them in the oven for 7-8 minutes
COOK THE ASPARAGUS
Add arugula to a large bowl. Season with salt, pepper and little dressing
ASSEMBLE
Add the remaining salad ingredients; drizzle with more dressing.
Add toppings such as Pecans, pistachios, sliced almonds and hemp seeds add that perfect crunch
Add pickled onions, artichoke or sundried tomatoes for an extra punch of flavor.
TOP TIPS
Sprinkle on some vegan ricotta or feta if not dairy-free, Whole30 or paleo.
