GLUTEN FREE LEMON CAKE
This Easy Gluten Free Lemon cake is made with layers of soft, tender lemon cake paired with a creamy citrus frosting! It’s perfection!
Mix the dry ingredients; almond & coconut flour, baking powder, baking soda & salt.
Mix the wet ingredients; almond milk, vinegar, eggs, maple sugar, coconut oil, lemon extract, lemon juice & zest.
Slowly combine; using a wooden spoon.
Evenly divide; the batter between baking pans
Bake for 19-24 minutes; or until a toothpick comes out clean.
Cool the cake; for 30 minutes before frosting.
To make the frosting; mix the frosting ingredients using an electric stand mixer or hand mixer. Cover & chill until ready to assemble the cake.
Once the cake is cool; layer with frosting, smoothing with spatula.
Add a layer on top; repeat if you have 3 layers & frost the sides if desired.
