HEALTHY BANANA PANCAKES

These Healthy Banana Pancakes are light, thick, fluffy and easy to make in one bowl. They’re loaded with banana bread flavor with an optional caramelized banana topping and make the perfect special breakfast or weekend brunch.

KEY INGREDIENTS

INSTRUCTIONS

Beat the eggs and whisk in the mashed banana, nut butter, and coconut sugar. Pour in milk, apple cider vinegar, and vanilla. Mix until smooth. Slowly add flours, protein powder, baking powder, and stir until combined.

TOPPING

Melt vegan butter in a skillet and stir in maple syrup and cinnamon. Add bananas in a single layer and cook 1-2 minutes on each side.

COOK

Coat griddle with oil and cook pancakes until edges begin to turn golden brown. Flip and cook another 2-4 minuters.

Serve with maple syrup, caramelized bananas, melted ghee, or whipped coconut cream if desired.
