ICEBOX CAKE
WITH MIXED BERRIES
This Icebox Cake with mixed berries is the perfect easy no bake dessert for summer. Made with simple pantry ingredients and just 10 minutes to prep.
KEY INGREDIENTS
Graham Crackers
Cold Heavy Cream
Softened Cream Cheese
Powdered Sugar
Mixed Berries eg. strawberries, blackberries, raspberries & blueberries
MAKE WHIPPED CREAM
With a hand mixer or stand mixer, whip 2 cups of heavy cream until it just holds soft peaks. Add powdered sugar and vanilla extract and whip until stiff peaks hold. Reserve 1/2 cup for later.
In a separate large bowl, beat the cream cheese until smooth. Fold in the 3 cups of whipped cream.
Spread a thin layer of the cream mixture in a 8 x 8 pan.
ASSEMBLE
Add a layer of graham crackers. Spread half of the cream mixture on top. Place a single layer of mixed berries.
Repeat all 3 layers; cream, crackers & berries.
TOPPING
Top with the final layer of graham crackers. Spread the reserved 1/2 cup whipped cream on top.
Add berries & cracker crumbs then refrigerate for at least 4 hours or overnight.
Serve chilled & enjoy!
